May: ペラ焼き (Perayaki)

This month's word is Perayaki. Originating from Nishimura restaurant in 1956, Perayaki has been very popular among people in Shimizu city in Kouchi prefecture. It is made out of the thin baked dough of okonomiyaki with green onions, katsuobushi, minced tempura (not the regular tempura), and eggs. It is often served with Worcester sauce and mayonnaise. The owner of the restaurant, Mr. Wakamatsu, was fascinated by the taste of okonomiyaki, and later created a similar dish with Kouchi prefecture's fresh ingredients.
