July: 甲府鳥もつ煮

(Koufu Tori Motsuni)
Koufu Tori Motsuni is a very popular dish often served at
soba (Japanese buckwheat noodle) restaurants in Yamanashi prefecture. Right
after WW2 around 1950, a soba restaurant chef thought chicken giblets that are
usually thrown away could be used for a cheap and delicious dish, and came up
with the idea for this dish. Hearts, livers and kinkan (unborn egg) are the
popular ingredients, and they are doused in sauce made with soy sauce, sugar,
and sake. In 2010, this dish won the first prize at the B-1 competition.
