Word of the Month: August
Itarian (not to be confused with the word Italian) is
Niigata's popular B-kyuu gurume dish regularly eaten by people in Niigata. It is
made of stir-fried Chinese egg noodles and chopped cabbage seasoned with
Worcester sauce as well as stir-fried bean sprouts and tomato sauce with various
vegetables on top. The owner of a cafe called "Mikazuki" in Niigata
took the Osaka-style yakisoba he ate in Tokyo and came up with the idea of
putting sweet and sour tomato sauce on regular yakisoba in 1960. Since then,
Itarian has been a favorite of the people of Niigata.
